Recipe 💚
For the rice:
1 cup rice
3 tbsp cilantro, chopped
3 tsp vegetable oil
lime juice
salt
1) Cook rice as you normally would. I use jasmine rice and do 1 cup of rice to 1.5 cups of water, bring to a boil, cover and simmer for 15 min.
2) Add 3 tbsp of chopped cilantro, 3 tsp of vegetable oil, the juice of half a lime, and a dash of salt. Mix & Thats it.
For the shrimp:
10-15 shrimp
2 tsp taco seasoning
Olive oil
1) Heat a pan on medium and add a generous drizzle of olive oil. While that’s waiting, add about 2 tsp of low sodium taco mix seasoning to the shrimp or however much you like.
2) Once the pan is hot, add the shrimp. Cook 3 minutes per side, or until the internal temp is 145. (I always just check to be safe).
Add some greens or whatever toppings you want! Some guac and feta would be so good in here too.
