Blueberry muffins 🫐
Ingredients
• 1/2 cup (125ml) buttermilk
• 1 egg
• 2 tbsp oil
• 2 tbsp unsalted butter, melted
• Splash of vanilla essence/extract
• 1 1/4 cups (185g) all-purpose flour
• 1 1/2 tsp baking powder
• 1/2 cup (100g) sugar
• Pinch of salt
• Blueberries
• Streusel topping:
• 1 tbsp flour
• 2 tbsp sugar
• 1/2 tsp cinnamon
• 1 tbsp cold butter
Instructions
1. In a bowl, whisk together the buttermilk, egg, oil, melted butter, and vanilla.
2. In another bowl, combine the flour, baking powder, sugar, and salt.
3. Gently fold the wet ingredients into the dry ingredients until just combined.
4. Fold in the blueberries and evenly scoop the batter into a muffin pan lined with baking paper.
5. For the streusel topping, mix the flour, sugar, and cinnamon. Mix until mixture forms coarse crumbs. Sprinkle over the muffins.
6. Preheat the oven to 180°C (350°F) and bake the muffins for 25 to 30 minutes.
