Cooking is supposed to be fun and experimental so before you get started be sure to remember that, and substitute or add what you feel fits your lifestyle!!
Step 1: Wash your quinoa and vegetables. As you allow your quinoa to drain, dry your vegetables and season with; Salt, Pepper, Garlic, Smoked Paprika, Smokehouse Maple.
Step 2: Preheat your baking dish and set your oven to 380 degrees (Fahrenheit). Once finished preheating add your vegetables and tofu to roast.
Step 3: Take a clean small pot, add in butter and/or olive oil. To the melted butter add in your Epis or seasonings and add quinoa. Allow the seasonings and quinoa to saute for a little before adding a tad bit of chicken broth or stock and some water just to cover the quinoa. Season just a little once again and then allow to simmer. Allow the quinoa to cook for 35 mins and the vegetables and tofu to cook until golden brown or preferred texture!
Step 4: Assemble!! To a bowl place your bed of quinoa; add your bbq tofu, roasted veggies, greens, avocado and/or more of whatever you chose!
The staple of this bowl is the quinoa, roasted veggies of your choice and tofu! Today I topped this simply with some greens from my garden, half an avocado, some lime, and honey mustard vinaigrette. Enjoyyy!!💋🧘♀️🌸
