Only the finest ingredients, along with seasonal Japanese influences, go into creating their pleated cakes. Using French techniques, each is handmade to perfection in a 12-hour long process over 3 days.

They only release new slots every Monday at 10am, for pre-orders 2 weeks in advance.

I tried their newest release and Christmas special. The Ruby Coconut Pleats.

This flavor is made of rich coconut bavaroise mousse atop layers of lychee Gelée, nutty almond sponge, and Raspberry Inspiration pressed shortcrust.

Ruby Coconut Pleats is finished in snow white with shimmering burgundy highlights, an elegant masterpiece to complete your festive experience, just nice for Christmas!

I'm so surprised that it is not sweet at all given the look.
