Greek Lemon 🍋 Potatoes 🥔
Greek lemon potatoes are a classic dish loved by many. These potatoes are not just any regular potatoes; they are bursting with flavor! When you bite into them, you're greeted with a perfect blend of tangy lemon, aromatic garlic, and a touch of herbs. The outside is slightly crispy, while the inside stays wonderfully soft and fluffy. This dish is often found in Greek tavernas and has become popular worldwide.
Ingredients
▢ 4 large Russet potatoes peeled and cut into wedges
▢ ⅓ cup olive oil
▢ Juice of 2 lemons
▢ 3 cloves garlic minced
▢ 2 teaspoons dried oregano
▢ ½ teaspoon salt
▢ ¼ teaspoon black pepper
▢ 1 cup chicken or vegetable broth
▢ ½ cup water
▢ Lemon slices and fresh oregano for garnish optional
Instructions
Preheat the oven to 400°F (200°C).
In a large bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper.
Add the potato wedges to the bowl and toss to coat evenly.
Arrange the potatoes in a single layer in a baking dish.
Pour the broth and water over the potatoes.
Bake for 40-45 minutes, stirring halfway, until potatoes are golden and crispy.
Garnish with lemon slices and fresh oregano, if desired.
