Green Goddess Pesto Bowl 🌱

This is my new favorite bowl! I have been making it for the past 3 days it’s so good! you can make it for lunch or dinner I’ve been recently packing it for my lunch for work and it’s just been filling me up and giving me energy throughout my day!

green goddess bowl —

1/2 - 1 cup of cooked farro

edamame

micro greens

cucumber

roasted broccoli

top with pistachios, hemp seeds and homemade pesto (recipe below)

homemade pesto —

handful of basil (you can add more as you go for taste)

2-3 tbsp hemp seeds

2 1/3 cups olive oil (add more if you want it thinner)

1/4 cup nutritional yeast

1 small lemon juiced or 1/2 a big lemon (fresh)

sea salt and fresh pepper

2 gloves garlic (more or less depending on your like for garlic)

Something I love about this pesto is that you can put it on honestly anything! I love to put it on my pasta, I put it on my salads, I dip veggies in it! and the best part is all the ingredients are plant-based and good for you and just add some extra nutrition into any food you decide to put it on!
