Green Goddess Salad 🥗

Let’s make one of my favorite summer salads!

I can't believe it took me so long to make this, but it’s safe to say this salad went viral for a good reason. Baked by Melissa you have truly outdone yourself!

Salad:

1/2 cabbage (shredded)

2 cups cucumber (chopped)

1 bundle green onions (chopped)

1/4 cup chives

Dressing:

1 cup spinach 1 cup basil

2 cloves garlic 1 shallot

1/2 jalapeño (optional) 1/3 cup nutritional yeast 1/4 cup cashews

juice of two lemons

1/4 cup olive oil

2 tbsp rice vinegar pinch of salt

How to: shred cabbage and dice cucumber, green onions, and chives then set aside. blend all dressing ingredients together using a blender or food processor. Add salad base and dressing into a large bowl and toss evenly. serve with your favorite tortilla chips (i used trader joes) or eat as is and enjoy!
