This one pot-meal is sure to become a staple on your weeknight dinner menu. It’s so simple, packed with flavor and creates unimaginably tender chicken.

Ingredients are below:

• 3 lbs. boneless skinless chicken thighs

• 1 red or yellow onion, diced

• 3 cloves of garlic, minced

• 1 T. Paprika

• 1 T. Dried Parsley

• 1/2 T. Salt

• 1/2 T. Garlic Salt

• 1/2 T. Ground Black Pepper

• 2 t. Dried Thyme

• 1 quart Chicken Stock

• 1.5 cups white rice; rinsed

Preheat oven to 400°F

Sear chicken on medium high heat, don’t brown to cook, we’ll finish in the oven.

Remove chicken to plate. Brown onions and garlic in the pan scraping up bits from the pan. Season with salt and pepper at this step.

Add in rice and stir to gather flavor on the rice.

Deglaze pan with stock season again with salt and pepper to taste.

Add chicken back to the pot and cover.

Place pan into oven for 20-25 minutes to cook rice and finish chicken.

Garnish with fresh parsley, if desired. Enjoy!
