one pot nourishing lemon chicken + rice <3 a weeknight staple once it starts getting chilly out!! The chicken + rice are one pot but you can add a simple side salad or whatever veggies you want on the side!
Chicken + rice ingredients:
-1 lb chicken breasts
-1 cup basmati rice
-2 cups broth (using bone broth for extra nutrients here)
-1/2 cup finely chopped shallots (can also do any onion here)
-4 cloves garlic
-juice of 1 lemon
-1 tsp garlic powder
-1 tsp onion powder
-1 tsp paprika
-1 tsp turmeric
-1 tsp oregano
-1/2 tsp ish red pepper flakes
-salt & pepper
-extra virgin olive oil or butter (as needed)
-parsley, green onions, extra lemon for serving!
**optional green beans or simple salad on the side!
Directions:
1. First trim your chicken breasts and then drizzle with a little olive oil. Add all seasonings (garlic powder, onion powder, paprika, turmeric, oregano, salt, pepper, red pepper flakes) directly onto the chicken and rub in.
2. Then heat a dutch oven or large pot over medium high heat with a little olive oil or butter in the pan. Add seasoned chicken into the pan and sear for about 3 minutes on each side. When you’re done searing, remove chicken from pan and set aside.
3. Turn heat to medium low and to the same pot, add a little more oil/butter as needed and then add in your chopped shallots. Mix around and cook for a few minutes. Then add in your garlic and mix again - cook for a few minutes careful not to burn. Then add in your basmati rice and mix rice for a minute so it get’s coated in the oil + all the flavor! Add in chicken broth + juice of 1 lemon and bring to a boil. Once boiling, add your chicken back in, reduce heat to a low simmer, and cover for 20 minutes.
4. While chicken + rice are cooking, prep your toppings (chopped parsley, green onions, lemon wedges) and any sides. For this I love easy sautéed green beans or an arugula side salad.
5. Once chicken + rice are done, remove chicken and slice. Give rice a good mix and then enjoy!!!!
