Sausage Tortellini Soup with Spinach

Ingredients

1 lb Italian sausage (mild or spicy), casings removed 🌭

1 medium onion, diced 🧅

2 cloves garlic, minced 🧄

4 cups chicken broth 🥣

1 can (14.5 oz) diced tomatoes, undrained 🍅

1 package (9 oz) cheese tortellini 🧀

4 cups fresh spinach 🌿

1 teaspoon dried oregano 🌿

1 teaspoon dried basil 🌿

Salt and pepper to taste 🧂

1 tablespoon olive oil (if needed) 🫒

Parmesan cheese for serving (optional) 🧀

Instructions

Brown the Sausage:

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon (about 5-7 minutes). Drain excess fat if necessary.

Sauté the Vegetables:

Add the diced onion and garlic to the pot. Cook until the onion is translucent (about 3-5 minutes).

Add Broth and Tomatoes:

Pour in the chicken broth and add the diced tomatoes. Stir in the oregano and basil. Bring to a simmer.

Cook the Tortellini:

Add the cheese tortellini to the pot and cook according to package instructions (usually 3-5 minutes).

Incorporate Spinach:

Once the tortellini is cooked, stir in the fresh spinach and cook until wilted (about 2 minutes). Season with salt and pepper to taste.

Serve:
