Breakfast:
-Usually, I make eggs either scrambled or fried, with white rice, and steamed vegetables. I like adding tomatoes and letting them get soft to create a tomato sauce. Sometimes I have yogurt, fruit, and granola too.
Lunch:
-I usually make salads for lunch. I basically add spring mix or spinach, and every vegetable in my fridge that works on a salad. I like beets, olives, chickpeas, cucumbers, tomatoes, sweet peppers, baby corn, red onions, and top it off with feta.
-For dressing, I use olive oil, minced raw garlic, red wine vinegar, pesto, lemon juice, salt, and pepper.
-Then I top it off with protein, which is usually shrimp because they’re easy to make and super yummy.
Dinner:
-I usually do some type of stir fry. White or brown rice with all of the vegetables in my fridge that taste good steamed.
-I will eat salmon, tuna, or shrimp with this.
-For sauce, I either do an asian style stir fry (oyster sauce, kim chi, coconut aminos) or lemon butter (butter, lemon, garlic).
Desert:
-Rice cakes, almond butter, honey
-I also like doing mashed banana and honey
-Tru Fru chocolate covered strawberries
-Dark chocolate and dark chocolate coconut covered almonds (aldi)
Snacks:
-Trail mix
-Dried fruit
-Nuts
-Olives
