• 2 lbs beef stew meat (cubed)
• 3 tbsp olive oil (divided)
• 1 large onion (diced)
• 3 carrots (sliced)
• 3 celery stalks (sliced)
• 3 garlic cloves (minced)
• 4 cups beef broth
• 1 cup red wine (optional)
• 3 tbsp tomato paste
• 2 tbsp flour (for thickening)
• 3 large potatoes (cubed)
• 1 cup frozen peas (optional)
• 2 bay leaves
• 1 tsp dried thyme
• 1 tbsp Worcestershire sauce
• Salt and pepper (to taste)
• Fresh parsley (optional for garnish)
🥣 Instructions
1. Brown the Beef:
Heat 2 tbsp olive oil in a large pot. Season the beef with salt & pepper. Brown in batches, then set aside. 🥩
2. Sauté the Veggies:
In the same pot, add 1 tbsp olive oil. Sauté the onions, carrots, and celery until soft. Stir in garlic and tomato paste. 🍅🧅
3. Deglaze:
Pour in red wine (or extra broth) to scrape up all the flavorful bits! 🍷
4. Simmer:
Return the beef to the pot, add broth, potatoes, thyme, bay leaves, and Worcestershire sauce. Cover and simmer on low for 2 hours. 🕑
5. Thicken:
