If you know me, you know I love organizing girls night!
So I told my friends to come over for an “indoor picnic” (it was raining) and to not worry about bringing anything. Then I got to work on making my hummus (recipe below) while simultaneously baking a cake.
I’m a huge fan of grazing plates/charcuterie boats, since you can pick and choose what to eat and can have a little bit of everything! So that’s exactly how I set up my table.
We loved all of the food and more importantly each others company 🤍
Sun-dried Tomato Hummus-
2 cans chickpeas, rinsed and drained
2-3 tbs sun dried tomatoes, diced (first soaked in warm water for 5 min and drained if using dried)
3 cloves garlic, minced
1/2 tsp paprika
1 medium/large lemon, juiced
1/4 cup olive oil
3 tbs tahini (you can make it without it, but this is more authentic!)
Salt and pepper to taste
Blend everything together in a processor or blender until will combined. Optional- Top with olive oil and diced sun dried tomatoes!
