This dish is quick and easy to put together, without missing out on all the great flavours! ๐ถ๏ธ This recipe is simple to follow, but fancy enough if you want to impress your date! ๐ Besides, doesnโt love a healthy cheesy treat! ๐ป

โซ๏ธ1 tomato (here, we donโt have regular tomatoes on hand substituted it for cherry tomatoes instead)
โซ๏ธยฝ onion
โซ๏ธ1 bell pepper (we char it over open fire, more on this below)
โซ๏ธยฝ - 1 lime, for freshly squeezed lime juice
โซ๏ธHandful of chopped cilantro
โซ๏ธSalt & pepper to taste

โซ๏ธ4 boneless chicken thighs
โซ๏ธcajun spices (we use MasterFoods cajun seasoning that you can easily get from supermarkets!)
โซ๏ธdash of olive oil
๐ถ๐๐๐๐ ๐ฐ๐๐๐๐๐ ๐๐๐๐๐
โซ๏ธtortilla wrap (we got ours from the supermarket)
โซ๏ธmozzarella cheese (or any other melty cheese of your choice!)
โซ๏ธbaby spinach
โซ๏ธolive oil
๐ฐ๐๐๐๐๐๐๐๐๐๐๐ ๐ณ

1๏ธโฃ Dice onion and tomatoes. Set aside in a bowl.
2๏ธโฃ Chop cilantro. Add to bowl.
3๏ธโฃ Place the bell pepper directly on open flame to char. Move it around until the skin is completely charred.
4๏ธโฃ Immediately place the charred pepper into a pot or bowl. Cover with a tight lid or cling wrap, and let it sit for 10-15 mins.
5๏ธโฃ When pepper is cool enough to handle, peel away the charred skin and rinse away the remaining charred bits.
6๏ธโฃ Dice the pepper (discarding the ribs and seeds) and add to the bowl.
7๏ธโฃ Add in lime juice and mix all of the ingredients. Add salt and pepper to taste.

We highly recommend charring the bell pepper for that deep smoky flavour! If you prefer not to char the bell pepper, you can slice it up and roast it with olive oil in the oven, before adding to the salsa mix.

1๏ธโฃ Clean up the boneless chicken thighs, pat dry and season generously with cajun seasoning. Best if you can let it sit overnight or up to 1 hour before cooking - the longer it marinates, the deeper the flavour!
2๏ธโฃ Oil pan, set to medium heat. Place chicken thighs with skin side down and let it cook for 3-5 mins (depending on size and thickness). Avoid moving the meat around too much when cooking so it can develop a nice sear.
3๏ธโฃ When one side is done, flip over to the other side and cook for another 3-5 mins (depending on size and thickness). Once meat is fully cooked, remove and set aside. Chicken thighs can be sliced or diced, depending on your preference.

๐๐ป Once the tortilla wrap has been warmed in the pan, start assembling your dish in the following manner โ
1๏ธโฃ Thin layer of cheese
2๏ธโฃ Baby spinach
3๏ธโฃ Chicken thighs
4๏ธโฃ Salsa
5๏ธโฃ Thin layer of cheese
๐๐ป Once all the ingredients are snugly fitted onto the tortilla wrap, fold the wrap into half and let the quesadilla grill over low heat (~1 min).
๐๐ป When the bottom has browned nicely, carefully flip the quesadilla over to the other side to grill (~1 min).
๐๐ป Once the quesadilla is crispy and cheese has melted, it is ready to serve! ๐ง
๐ฅHOT TIP๐ฅ
The temptation is REAL but avoid stuffing your quesadilla with too many ingredients at one go, as this will make it challenging to hold together and flip over!
