This carbonara so creamy and savory it leaves you wanting more! I used guanciale aka cured pork cheek for this but you can swop it out with bacon or other cured meats!
Creamy Carbonara
Ingredients (serves 2):
100g parmesan regianno, grated
200g spaghetti
2 eggs, beaten
125g guanciale/ bacon
Recipe:
1. Boil spaghetti according to instructions.
2. Mix egg with grated cheese. Season with pepper.
3. Fry guanciale in pan (without oil - it releases a fair bit of oil).
4. Add cooked spaghetti into pan. Mix well, then remove from heat! IMPT* if not the eggs will scramble.
5. Add egg and cheese mixture, and season with more pepper if needed.
