Located just a 3-minute walk from Roppongi Station, "Fuki Seimen Kenkyujo" offers a delightful experience of tsukemen (dipping noodles) featuring flat noodles with an incredibly smooth texture. Paired with a rich dipping sauce infused with the flavors of katsuobushi (dried bonito) and kombu (kelp), this dish is truly a treat. The noodles have just the right amount of chew, making you want to slurp them up endlessly.
Instead of dipping them into the sauce, I highly recommend enjoying the noodles by adding a sprinkle of sea salt or a squeeze of sudachi citrus directly. After finishing the noodles, mix the leftover dipping sauce with the kombu water and enjoy it as a savory soup—it’s the perfect way to complete your meal!
