I don't know what is going on, but I have been absolutely craving fish the past couple of weeks. I had tuna and salmon nigiri for lunch today and grilled salmon for dinner last night. Today, I woke up and wanted Kani salad and decided I'd figure out how to make it at home!

I think on its own, it's super filling, and for a pretty low calorie lunch, it hits the spot. I don't know if a low calorie mayo substitute could be used to bring it even lower, though. I'm personally not a fan of mayo substitutes, so if anyone else wants to try it, please do!

But yeah, this lunch is super easy to make and comes in at only 365 calories. And if you haven't figured it out by now, cucumber is definitely my favorite vegetable. This recipe was also my first time working with Imitation Crab, and I was surprised by how low calorie it is. It's less than 30 calories a stick!

The only part of this recipe that's high in calorie is the mayo! Using 2 tbsp, put it at 200 calories and made up the bulk of it.
