Servings: about 15-20 macarons shells

Note: Please use a whisk and not a paddle!!
Step 1: Mix 80g egg whites + 75g fine sugar (beat it till it’s stiff peaks) Tip! Turnover your mixing bowl, if it stays then it’s good 👍🏻
Step 2: Add colouring (add more to make it darker because once you add the dry mixture the colour will become a shade lighter)
Step 3: Sieve almond flour + icing sugar into the stiff peaks, fold it with your spatula instead of using the whisk
Step 4: Preheat your oven to 110 degrees. LET IT HEAT UP EVENLY
Step 5: Fill your piping bag with the mixture and start piping onto a baking paper!! (Use a template if you are ocd)
Step 6: Put the tray into the oven with the oven door slightly open (called oven shower) and leave it for 2-3mins
Step 7: Close the oven door and let it bake for 15 mins at 120-130degrees
Step 8: Complete the baking by doing another open shower for 2-3mins
Step 9: LET IT COOL DOWN before separating the shells from the baking paper (I know it’s hard to resist not snacking on it immediately) 🤭
