Bringing you another easy dinner perfect for weeknights: SALMON RICE BOWLS! We usually have these once a week (or sometimes every other week depending on other meals) and it’s so yummy πŸ˜‹

+ salmon

+ broccoli florets

+ rice

+ EVOO

+ salt & pepper

+ cajun seasoning

1. Preheat oven to 425Β°F.

2. Place salmon on a foil-lined baking sheet. Drizzle olive oil on top and season with salt, pepper, and cajun seasoning. Sometimes, I like to add sesame oil as well for additional flavor but not necessary.

3. In a bowl, mix broccoli florets with olive oil, salt and pepper. Add florets to same baking sheet that salmon is on (you can do these separately if you don’t have room on one sheet pan, but I only ever cook for 2 people so one is perfect.)

4. Bake salmon and broccoli for 9-12 minutes, until salmon is fully cooked (thickest part reaches 145Β°F) You can leave the broccoli in for longer if you prefer it to be crispier.

5. Prepare rice of choice while salmon & broccoli are baking.

6. Once everything is done cooking, add rice to a bowl then the salmon & broccoli on top. I like to top it all off with a drizzle of coconut aminos or soy sauce, and enjoy!

I love this meal because it can be so versatile. You can change up the salmon’s seasoning, use asparagus or green beans instead of broccoli, do brown rice instead of white rice, the options are endless!!
