These juicy chicken skewers are packed with flavor and loaded with colorful veggies 🌈🍗. We’ve got green, red, and yellow peppers, plus some tasty red onions for that perfect grilled goodness. 🔥

Marinated in a blend of garlic, lemon, honey, and spices, these skewers are not only beautiful but also super easy to make! 😍

Ingredients:

    •    2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes

    •    2 tbsp olive oil

    •    3 cloves garlic, minced

    •    1 tbsp lemon juice

    •    1 tsp lemon zest

    •    1 tbsp soy sauce

    •    1 tbsp honey

    •    1 tsp smoked paprika

    •    1 tsp ground cumin

    •    1 tsp dried oregano

    •    Salt and pepper to taste

    •    Wooden skewers (soaked in water for 30 minutes if using wooden)

Vegetables:

    •    1 green bell pepper, cut into 1-inch pieces

    •    1 red bell pepper, cut into 1-inch pieces

    •    1 yellow bell pepper, cut into 1-inch pieces

    •    1 large red onion, cut into chunks

Instructions:

    1.    Prepare the marinade: In a large bowl, whisk together olive oil, garlic, lemon juice, lemon zest, soy sauce, honey, smoked paprika, cumin, oregano, salt, and pepper.

    2.    Marinate the chicken: Add the chicken cubes to the marinade, ensuring they are well coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.

    3.    Prepare the vegetables: While the chicken marinates, cut the green, red, and yellow bell peppers, as well as the red onion, into 1-inch pieces.

    4.    Assemble the skewers: Thread the marinated chicken onto the skewers, alternating with pieces of green, red, and yellow peppers, and chunks of red onion. Try to balance the colors for a visually appealing skewer.

    5.    I put them in the air fryer on air fry on 375 for about 10-12 minutes, turning occasionally, until the chicken is fully cooked and has nice grill marks. This all depends on the thickeners of your chicken.

    6.    Serve with your favorite dipping sauce, and a side of white rice 🤤
