These are a super cute dinner to make for fall. I made these into little pumpkin shapes but you can also just make it into any shape that you prefer gnocchi to be.

INGREDIENTS

-⅔ cup pumpkin puree

-½ cup ricotta

-1 ¼ cup flour

-⅓ cup parmesan cheese

-1 egg

-1/4 tsp salt

-pepper to taste

FOR SAUCE

-½ onion diced

-2 cloves garlic minced

-½ cup pumpkin puree

-¼ cup tomato sauce

-fresh thyme

-salt and pepper to taste

RECIPE

1) Line a strainer with cheesecloth or paper towel and strain the pumpkin puree to remove excess water. At least 20 minutes.

2) Mix the puree, ricotta, flour, parmesan, egg, salt, and pepper in a bowl and stir until incorporated. Form mixture into balls.

3) Create the pumpkin divots either using baker’s twine or a toothpick. For the pumpkin stem I used cloves but I have also seen people use pumpkin seeds or sage for this. If you use cloves then remove before eating.

4) Boil Gnocchi. You know they are done when they float to the surface.

SAUCE

1) For the sauce I cooked the garlic and onion over medium heat until tender.

2) Add the pumpkin puree, tomato sauce, thyme, and salt and pepper. Cook until flavors are incorporated, remove thyme before serving.
