Super easy recipe! Healthier and higher protein than regular banana pudding 😋
- 1 package silken tofu
- 3 ripe bananas (1 to blend into the pudding + 2 to layer)
- 2 scoops of vegan vanilla protein powder
- 1/8 tsp cinnamon
- 1/8 tsp salt
- 1/2 tsp vanilla extract
- 1 tbs cornstarch (I forgot to show that in the video)
- maple syrup to taste (I used about 2 tbs)
- dairy-free whipped topping
- vegan vanilla wafers/cookies (I used animal crackers because that's all I could find 😆)
Make the pudding:
- blend together silken tofu, 1 banana, protein powder, cinnamon, salt, vanilla, maple syrup, and cornstarch
- let set in the freezer for ~1 hour
Assemble:
- layer cookies, banana slices (from the remaining 2 bananas), and pudding. I got 2 layers of each.
- top with dairy free whipped topping, crushed cookies, and a slice of banana for the #aesthetic
- can be eaten straight away, but it's better if you let it sit in the fridge overnight!
