I am obssessedd with blended baked oats! They are truly a game changer and taste more like cake than regular oats. I added in an egg and protein powder so it makes it a complete breakfast and balancing your blood sugar levels. This tastes like a little mug cake! Feel free to underbake them a little so the consistency is more runny. I have so many variations of these that I love rotating through. Let me know what flavor you would like to see next!

PUMPKIN PIE OATS

Ingredients:

1/2 cup oats

1/4 cup plant milk (or any milk of choice)

1/4 tsp baking soda

1 tsp pumpkin pie spice (adjust to your taste)

1 egg

1 scoop protein powder

1/4 cup pumpkin puree

1 tbsp date syrup

Chocolate chips

2 chocolate squares (I used HU Kitchen)

Add all ingredients (except chocolate chips) to a blender. Blend until smooth and creamy. Add an additional tbsp of milk if needed. Pour into a small ramekin. Place dark chocolate squares in the middle and cover. Top with chocolate chips. Bake at 350f for 20 minutes. Let it cool for about 10 minutes before diving in. Enjoy!
