These creamy pumpkin overnight oats are a filling and delicious breakfast, and they’re so easy to make! This recipe is filled with healthy ingredients, but it tastes like dessert.
1/2 cup rolled oats (uncooked)
1/3 cup unsweetened almond milk
1 tablespoon chia seeds
3 tablespoons pumpkin puree
2 teaspoons maple syrup
1/2 teaspoon vanilla extract
1/4 teaspoon pumpkin pie spice
Pinch of salt
Pumpkin seeds or granola for topping (optional)
Add the oats, milk, chia seeds, pumpkin, vanilla, pumpkin pie spice and salt to a jar.
Stir until combined.
Place in the fridge for 2-3 hours or overnight.
Top with pumpkin seeds or granola and enjoy.
