PUMPKIN BARS WITH MAPLE CREAM CHEESE FROSTING 🤩🎃🤌
This pumpkin snack cake is the perfect breakfast, snack, or dessert. It’s lightly sweet, big on pumpkin flavor, and happens to be gluten free and flour free entirely (it’s kinda magic tbh!!!)
#Recipe details:
Pumpkin Bars:
(Fills one 9x5 loaf pan)
1/2 cup pumpkin puree
1/2 cup almond butter
1/4 cup maple syrup
2 eggs
2 teaspoons pumpkin pie spice
1 teaspoon vanilla extract
1/4 teaspoon sea salt
1/2 teaspoon baking soda
Frosting:
4 oz light cream cheese
1.5 tbsp maple syrup
1/2 Tsp vanilla
Directions:
- Preheat oven to 350, grease your pan
- Combine all ingredients and mix well until a smooth batter forms.
- Pour mixture into greased pan and bake for 30-40 minutes until the edges are golden brown and the center is solid
- Let cool completely before frosting
- Mix all frosting ingredients together and spread over bars. Sprinkle with extra cinnamon or pumpkin spice and slice into 8. Enjoy!
