It is officially September and this is probably the earliest I’ve ever posted a fall recipe but I am READY FOR FALL so here we go!!! These little cuties are gluten free, dairy free, and delicious! A perfect sweet treat that also has the benefit of some protein + fat to help you feel fuller. Grab the details below!

#recipe details:

Makes 14 truffles.

Ingredients:

1/3 cup almond flour

2-3 tbsp coconut flour

3 tbsp protein powder

1/2 tsp pumpkin pie spice

1/4 tsp cinnamon

2 tbsp granulated monk fruit sweetener (or sugar)

1 tbsp maple syrup

1/4 tsp vanilla extract

1/4 cup almond butter

2 tbsp pumpkin puree

14 chocolate chips

Instructions:

Combine almond butter, pumpkin puree, vanilla, maple syrup, pumpkin spice, and cinnamon and mix until smooth.

Add almond flour, protein powder, monk fruit sweetener, and coconut flour and mix thoroughly.

If dough is still too wet to roll into balls, add a bit more coconut flour.

Scoop approximately 1 tbsp of dough (I use a small cookie scoop), roll it into a ball, and use a toothpick to indent the sides to create a pumpkin shape. Press down slightly to flatten and finish with chocolate chip stem.

You can enjoy right away, but I like to let them sit in the fridge to firm up a bit. Store in the fridge and enjoy!
