ELOTE CHICKEN is on the menu this summer! 🌽🍗
Juicy, delicious chicken breast is topped with my lightened up Mexican street corn for a dish that’s filling, high in protein, but better for you!
For the chicken, you’ll need:
* 2 lb chicken breasts (5-6)
* 1.5 tsp chipotle pepper powder
* 2 tsp paprika
* 1 tsp cumin
* 1 tsp garlic powder
* 1 tsp onion powder
* 1 tsp kosher salt
1. Pat your chicken dry. Mix up the seasoning. Rub over the chicken breasts and spray well with cooking spray.
2. Air fry at 365 F for 14 min, or until the breasts reach an internal temp of 165F (will depend on the thickness).
To make the street corn:
Street corn
* 4 ears corn cooked and cut off the cob, 4 cups total
* 1/4 cup fresh cilantro, chopped
* 1/2 cup red onion, diced
* 2 tbsp pickled jalapeño, diced
* 1/4 cup cotija cheese, crumbled
Dressing
* 1/3 cup nonfat Greek yogurt
* 1/2 tsp chipotle chili pepper powder
* 1/2 tsp smoked paprika
* 1 tsp agave nectar (or can use honey)
* 1/4 tsp cumin
* Juice and zest of 1/2 lime
1. Mix the dressing up and adjust to taste then set aside.
2. Combine corn, cilantro, onion, cotija, and jalapeno in a bowl. Coat with dressing and mix to coat.
3. Spoon street corn over cooked chicken breasts, serve with your choice for sides, and enjoy!
