Where are all my potato lovers 🥔
This is an absolutely delicious Lebanese dish that is quick and easy to make. It’s a mix of roasted or fried potatoes, cilantro, chili peppers, coriander and cilantro. Super simple but so so tasty!! I pair them with roasted chicken, lamb or broiled kofta (recipe incoming) with a nice Mediterranean salad on the side.
Ingredients:
- 2 lbs potatoes (I use Yukon gold)
- 1 tbsp cornstarch
- 1 tsp shortening (substitute olive oil)
- 1 tsp onion powder
- 1 tsp salt
- 8 cloves crushed garlic
- 4 tbsp olive oil
- 1 1/2 tbsp tomato paste
- 2 tsp chili powder or chopped chilies (substitute 1 tsp harissa)
- 1/2 cup cilantro
- 2 tbsp lime juice
- salt and black pepper to garnish
Instructions
- Preheat oven to 450F
- Peel your potatoes and cut them into bite size pieces
- Add the potatoes, shortening, cornstarch, onion powder and salt to a bowl and toss until coated
- Place onto a baking tray and roast for 25 minutes or until brown and crispy. Flip them over halfway for evenness.
- Heat up the olive oil in a pan and sauté the garlic until fragrant. Add in the tomato paste and chilies and sauté until oil begins to separate from the paste.
- Add cilantro and lime juice and season to taste
- Add roasted potatoes and toss until well coated
