Best way to make zucchini 🍋

This is soooo good- one of my favorite ways to make zucchini and I’ve tried everything since they grow like crazy in the garden.

Cut crosswise in the top, add some salt and let them sit for a bit to lose excess water.

Then add some oil, and sauté or grill them.

Then chop red onion, parsley, and tomatoes.

Mix all together with some lemon or lime juice, a little oil, and put on the zucchini. Add some cheese like mozzarella or burrata or Parmesan.

You can also add garlic, Italian seasoning, anything you want and it’s all so bomb.
