TWIX COOKIE

Raw Twix Cookie

Base:

4 tbsp almond flour

1 tbsp oat flour

1 large date soaked in 2-3 tbsp boiling water

Pinch of salt

Vanilla extract

Caramel:

1 tbsp maple syrup

1 tbsp almond butter

1 tbsp almond milk

Chocolate topping:

1 tbsp milk chocolate chips melted with 1 tsp olive or coconut oil

To make the base, mash your date and vanilla extract until it forms a paste. Mix in your almond, oat flour, and salt, and stir until it forms a dough. Form into a cookie shape and freeze for 1 hour.

To make your caramel, mix together your syrup, almond butter, and almond milk until it is a thick but spreadable consistency. Spread over your cookie base and freeze for 30 more minutes.

After 30 minutes, pour your melted chocolate mixture overtop. Let the chocolate harden in the freezer and devour!
