The ingredients you need are shown in the first picture: potatoes🥔, carrots🥕, onions🧅, curry (this one is mild, but you can also choose a medium or spicy one), milk🥛 (you can substitute coconut milk if you prefer), and dark chocolate!🍫

You can also add a secret ingredient: an apple! 🍎

Both the apple and dark chocolate are little tricks to enhance the curry flavor, but you can skip them if you don’t have any.

The cooking steps are super easy:

1. Cut all the ingredients into pieces. I recommend chopping the carrots and potatoes into smaller pieces to shorten the cooking time.

2. Add oil to a pan and sauté the onions. Then, add the potatoes and carrots, along with a bit of water, and let them simmer until about 70-80% cooked. This will take around 10 minutes (adjust based on the size of your ingredients and heat).

3. Add the curry and stir-fry for about five minutes. Since the ingredients are almost cooked at this point, the goal is to melt the curry and keep stirring to prevent sticking.

4. During this process, you can add some milk, dark chocolate, and a bit of apple (about a quarter, finely chopped).

And you’re done! Honestly, it tastes even better than many curry dishes at Bay Area Japanese restaurants 😋
