One of the most popular dishes in Ukraine - Vareniki - kind of dumplings. We eat them in all kinds of way and with multiple fillings. Sweet with cottage cheese or cherries 🍒, savoury - with potatoes, mushrooms, cabbage and so on…

It’s a bit time consuming especially if you are like me without experience haha. I made them only once before on my own. My mom and grandma were masters and I ate them quite often as a child but only now in my late 20s decided to explore family recipes and authentic cuisine.

Yet it’s a great meal prep idea bc you can make a lot of them from a very small amount of ingredients and freeze them so you have them for the next couple weeks or so. For whenever you need something filling, easy and healthy and don’t have time to cook.

Today I made them with potato feeling. I fried some onions and mushrooms too to add to mashed potatoes to make the feeling more flavourful and rich.

Then the dough is very easy:

•water - half a glass

•1 egg

•0,5 tsp salt

•flour - approximately 400gr - or as much as the dough takes.

Mix together and form with your hand in the end. It shouldn’t be too sticky. Add more flour if needed.

Roll into flat thin shit and cut circles with the glass. Then add 1 tsp of filling and close together. I used a fork to fix edges together - see the picture.

You would cook them in the same way no matter of fresh right away or frozen.

Simply add to boiling water desired amount, wait for water to boil again and cook 3-5 minutes until floating and ready. Maybe stir one time in between to prevent sticking.

I also like to slightly fry them afterwards with extra onions 🧅 for more stocky flavour but they are good also without this step. In Ukraine we eat them with sour cream and it’s very tasty 😋
