Who else loves a good Crunch Roll?
Theyโre one of my favorite kinds of sushi rolls, which is why I love this bowl so much! It tastes just like a crunch roll, but itโs much easier to make and eat. ๐
Crunch Rolls are a slight variation of the California sushi roll. Inside is filled with shrimp tempura, crab, avocado and sometimes cucumber. The outside is most commonly topped with tempura flakes and drizzled with eel sauce, a reduction of soy sauce, sugar and mirin (and doesnโt actually include any eel).
I donโt add any shrimp in this recipe, to save on time, but if you feel like making some to add to your sushi bowl, Iโm sure it would be an awesome addition! However, itโs really not needed and you still get the full flavor of a crunch roll without it.
**If you want to make this extra healthy, feel free to skip one or both of the sauces and just add a dash of soy sauce to your bowl instead.
Hereโs what you need:
INGREDIENTS:
8 oz imitation crab, diced
3 cups white or brown rice, cooked
1 cucumber, diced
1 large avocado, diced
ยผ cup cilantro, chopped
FOR THE EEL SAUCE:
ยผ cup soy sauce
ยผ cup sugar
3 tbsp mirin
FOR THE SPICY MAYO:
ยผ cup mayo
1 tbsp Sriracha
First, make your rice. Then, make the eel sauce and the spicy mayo. Toast the Panko, chop the fresh ingredients and throw everything in a bowl!
