the best vegan carrot cake 🥕

can we all just take a minute and talk about how underrated carrot cake is??? AND ITS SO GOOD 🤭🥕

1. Prepare your flax egg using 1 tbsp ground flaxseed meal with 3 tbsp water

2. In a large bowl, mix 1 cup sifted all purpose flour with 1/2 tsp baking powder, 1/3 tsp baking soda, 1 tsp cinnamon, 1/2 tsp nutmeg, and a pinch of salt.

3. Then add in 1 cup of grated carrot along with 3/4 cup of light brown sugar. Mix again.

4. Finally, add in your flax egg to the bowl, along with 1/4 cup oil, 1/2 tsp vanilla, 2 tsp ACV, and 1/2 cup of walnuts.

5. Mix until combined and bake at 350 for 30 mins (in an 8 inch round pan). Let cool before frosting and ENJOY 🧡

for the frosting: 2 cups powdered sugar, 1/3 cup softened vegan butter, 1 tsp of vanilla whipped until creamy
