1. Use jumbo scallops because small ones can overcook easily.
2. Always dry the scallops with a paper towel before cooking.
3. Season with salt and pepper just before grilling.
4. Preheat the pan and check its heat by sprinkling water on it – if it runs and disappears, the pan is ready.
5. Add olive oil to the hot pan at medium-high heat.
6. Wait for smoke from the oil as a sign that it's hot enough.
7. Grill one side of each scallop in this hot oil for 1-2 minutes.
8. Flip them over, then turn down to medium heat so they don't overcook (since you started at medium-high).
9. Add butter and herbs (if you have) for extra flavor.
