This high protein tortilla quiche is so delicious and packed with protein and veggies. It is the perfect breakfast or brunch dish and even great for meal prep. I love this dish because its so easy to make and is so tasty.

Ingredients:

8-9 eggs

1/2 container of cottage cheese

5 Small tortillas

1/2 yellow onion diced

1 cup of broccoli chopped

1 cup of cherry tomatoes chopped

5 slices of turkey ( or any meat)

2 cups of Cheddar cheese

Salt, pepper, garlic powder

1 tbsp of coconut aminos

Sriracha sauce ( on top) ( I mix 1/4 cup of maple syrup with 1/4 cup of sriracha)

Directions:

1. Preheat oven to 400 degrees Fahrenheit.

2. On a medium pan, add your onions, broccoli, tomatoes and turkey, add sprinkle of salt, pepper, garlic powder and coconut aminos, cook for about 5 minutes until onions are translucent.

3. In a large bowl, crack your eggs, add in your cottage cheese and add in your sauteed mixture and mix. In a pie dish, add 5 small tortillas ( make sure the edge of the tortillas is up above the dish). Add in your egg mixture and add your shredded cheese on top.

4. Cook on 400 for about 40 minutes until cheese is browned and the egg is cooked through in the center.

5. Serve with Sriracha sauce and Enjoy!
