Let’s make some dinner!

I opted in for ingredients that helped with macro tracking, but listed below are general items bc I don’t like telling people what to do soooo…

INGREDIENTS:

🍋Chicken (I used canned chicken breast to make life a little easier)

🍋 Yellow onion

🍋 Serrano pepper (if you’re feeling spicy, add in your choice of a pepper. I chose Serrano bc that’s what I had on hand, but a jalapeño would work great too!)

🍋 Cottage cheese

🍋 Siete red enchilada sauce

🍋Mexican blend cheese

🍋Tortillas

🍋Melinda’s green sauce (ok this is a MUST)

🍋Salsa (optional)

🍋(pictured but didn’t end up using) red bell pepper, if you want to add more veggies!

ALWAYS Measure w your ❤️

1. Preheat oven to 375°

3. Dice/mince onion, pepper, garlic

2. Shred chicken. Add seasonings: chili powder, paprika, garlic/onion powder, & cumin

3. In a blender, add a small amount (~1/4 cup) of Siete enchilada sauce & cottage cheese

4. Sauté onions, then add pepper, and garlic

5. Reduce heat before adding chicken (esp. if you use canned chicken, it’s already cooked. Just want to slightly heat it up and incorporate everything)

6. Pour over the enchilada/cottage cheese mix

7. Assemble tortillas, adding a small amount of cheese, & roll

8. Bake for about 10-15mins

9. Add your favorite toppings (cilantro, sauces, sour cream, avocado, etc.)

Tasty & easy meal to throw together after a long day!

Side note: been seeing so many people blend their tomato sauce with cottage cheese to add more protein and creamier texture for pasta. I took the same idea and thought it would be fun for enchiladas too bc why not try it? Experimenting is something I always look forward to in the kitchen, and this one turned out to be a success!
