Capirotada is a traditional Mexican bread pudding that combines sweet and savory flavors. Here's a basic recipe to make capirotada:
Ingredients:
6 cups of stale bread, sliced into small pieces (such as bolillo or French bread)
2 cups of water
1 cup of piloncillo or brown sugar
1 cinnamon stick
1 cup of grated cheese (such as Monterey Jack or cheddar) I use queso fresco
1 cup of chopped nuts (such as almonds or pecans)
1 cup of dried fruit (such as raisins or dried apricots) I use raisins
Butter or oil for greasing the baking dish
Instructions:
Preheat your oven to 350°F (175°C). Grease a baking dish with butter or oil and set aside.
In a saucepan, bring the water to a boil. Add the piloncillo or brown sugar and the cinnamon stick. Stir until the sugar is dissolved, and then remove from heat.
In a large bowl, combine the torn bread pieces, grated cheese, chopped nuts, and dried fruit.
Pour the hot sugar mixture over the bread mixture and stir until everything is well coated.
Transfer the mixture to the greased baking dish and spread it out evenly.
Cover the baking dish with aluminum foil and bake in the preheated oven for about 30 minutes.
After 30 minutes, remove the foil and continue baking for another 10-15 minutes, or until the top is golden brown and crispy.
Remove from the oven and let cool slightly before serving.
Top with shaved coconut and rainbow sprinkles.
Serve the capirotada and add more shaved coconut and sprinkles to your liking
Best served warm or at room temperature.
