High Protein Mini Pumpkin Waffles 🧇🎃
These are so delicious, fun, & easy to make! The pumpkin waffle shape just make it so much cuter. My waffle maker is by @bydash
I know the audio says pancakes lol but you can use this batter interchangeably for waffles & pancakes 🥞

INGREDIENTS:
1 1/4 cup oat flour
60g protein powder - I used the @prozis unflavored vegan protein - 🚨 Code KATIE10 for 10% off
2 tbsp monk fruit or sweetener of choice
1 tsp pumpkin pie spice
Dash nutmeg
1/4 tsp cinnamon
3/4 tsp salt 🧂
1 tsp baking powder
1/2 tsp baking soda
1 cup unsweetened almond milk🥛
2 eggs 🥚
1 cup pure pumpkin purée 🎃
INSTRUCTIONS:
1. Warm up your waffle maker.
2. Whisk together all of the dry ingredients together in a large mixing bowl.
3. Add in the wet ingredients and mix until fully incorporated.
4. Cook your waffles for about 2 1/2 minutes each and enjoy!
Makes 24 mini waffles (1/8 cup batter per waffle). I used a mini dash waffle maker. This would probably make 10-12 large 😊
