Flourless Pumpkin Pie Bars 🎃
INGREDIENTS:
1 cup pumpkin purée
1 egg
⅓ cup almond butter
⅓ cup sugar free maple syrup (or sweetener of choice)
½ tsp vanilla extract
30g unflavored protein powder
2 tbsp golden monk fruit (optional if you like it sweet)
2 tsp pumpkin pie spice
½ tsp baking soda
Pinch of salt
glaze:
1/2 tbsp maple syrup
1/8 cup powdered monk fruit

INSTRUCTIONS:
1️⃣ Preheat oven to 350°. Line a 8x8 baking dish with parchment paper. Mix the pumpkin bar ingredients until smooth.
2️⃣ Pour the mixture into the prepared baking dish. Place it into the oven and bake the bars for 35 minutes or until the center has set.
3️⃣ Let the bars cool completely. Make the maple glaze: whisk maple syrup and powdered monk fruit together, then drizzle it over the bars.
Slice into 9 large or 16 small bars and enjoy!
