Everything I ate today on my weight loss journey that are healthy and easy balanced meals!
Coffee (200 calories) ~ first thing’s first, I can’t start my day off without some coffe. Today, me and my husband went on a coffee run to Nep Cafe here in Orange County, CA. I tried the Vietnamese egg coffee for the first time and it was absolutely delish!
Breakfast (500 calories) ~ during the weekends, I enjoy putting more effort in making my breakfast. Today, I had a veggie breakfast patty, a mini waffle topped with some fruit, potatoes and eggs. Such a comforting and fueling meal to start off the day!
Lunch (300 calories) ~ I was still feeling pretty full from the breakfast, for lunch I made one of my favorite salads. For the dressing, I combined some olive oil, balsamic vinegar, salt pepper and lemon and added it into a bowl with mixed greens. Topped it with some tomatoes, red onions and feta cheese. It was so good!!
Dinner (400 calories) ~ I could have tacos every day. For tonight’s dinner, I made some shrimp tacos. This took all under 20 minutes to put together. I added some feta cheese, avocado and a chili mango slaw salad. This was so good and so fresh!
