Steamed Fish with Chilli Bean Sauce
🐟Ingredients :
~ 1 Whole fish
~ 4 slices Ginger
~ 1 Spring onion, knotted
🍶Sauce paste :
~ 1 tbsp Lee Kum Kee Panda Brand Oyster Sauce (Less Salty)
~ 2 tbsp Lee Kum Kee Soy Sauce (Less Salty)
~ 2 tsp Lee Kum Kee Chilli Bean Sauce (Toban Djan)
~ 1 tsp Sugar
~ 1 tbsp Water (or as needed)
~ 1 Garlic, chopped
~ 4 Shallots, chopped
~ 1 knob Ginger, chopped
~ Enough cooking oil
🥣Sauce paste :
1. In a bowl, mix oyster sauce, soy sauce, chilli bean sauce, sugar and water. Stir well and set aside.
2. Sauté all the chopped aromatics until fragrant.
3. Add pre-mixed sauce and stir until combined. Add water if needed.
4. Scoop out and use on steamed fish.
👩🏻🍳Method :
Steaming the fish
1. Butterfly the fish for quicker steaming.
2. Place ginger sliced and spring onion on fish. Steam for 6 mins.
3. After steaming, remove ginger slices and spring onion. Discard excess water.
4. Generously slather sauce paste onto fish and return to steamer. Steam for another 6 mins.
5. Serve with hot rice!
