One of the very home-cooked Chinese soup. I added arrowroot, dried scallops, dried red dates and dried squid to impart sweetness to the soup. Yumm 😋👌
🧂Ingredients:
~ 150 g peanuts (soaked overnight)
~ 300 g lotus root (sliced thinly)
~ 1 part of arrowroot (peeled and cut into chunks)
~ 500 g meat (meat or chicken boiled and washed)
~ 10 red dates
~ 10g dried scallops (optional)
~ 10 g dried squid (optional)
~ 2.5 liters of water
~ 2 teaspoons salt or to taste
1 ) Soak the peanuts overnight, and they will soften quickly after cooking. Peeled lotus root and arrowroot cut into thin slices.
2 ) Wash red dates, dried squid and scallops, set aside for later use.
3 ) Blanch meat with boiling water for about 5 minutes to remove impurities and part of the fat.
4 ) Bring 2.5 liters of water and put in all the ingredients to pressure cooker select PRESSURE for 45 minutes. Remove lid when unit has finished releasing pressure.
5 ) Select SEAR/SAUTÉ and set to 15 minutes, add in 2 teaspoons, taste it and serve with mee suah immediately.
