4 chicken legs, chopped into drums n thighs.
1 onion chopped
4 potatoes chopped
2 Carrots chopped
3 celery chopped
some coriander
Button mushrooms halved
1 cup Red wine
1 tbsp Tomato paste
1 Chicken stock cube
Brown chicken pieces in a hot pan with oil, no need cooked through, set aside.
Same pan, add mushrooms, onion, carrot, celery.
When vegetables soften, add in red wine, tomato paste and chicken stock cube. If it’s too dry, add some water, not too much cos all the ingredients will produce liquid while cooking.
Bring to a boil, add in potatoes, return the chicken pieces into the pot.
Cover and simmer on medium heat for about 45 mins.
Season to taste if necessary. Garnish with coriander!!
Serve with rice or pasta or bread or on its own!
