So, rain is setting in as a substitute for the autumnal weather SG cannot have, so I was craving something warm and saucy, hence this dish! I've made it with chicken because that's what I had on hand, but please feel free to use whatever meats you have lying around eg. Beef/pork etc.

Makes 3-4 servings:
β’ 3-4 Chicken Thighs (boneless)
β’ 2 Whole Onions (sliced)
β’ 4 tbsp Butter
β’ 2 tbsp Garlic (minced)
β’ 1 pack button mushrooms (sliced)
β’ 200ml Chicken Stock
β’ 120g Light Sour Cream
β’ 40g Cooking cream
β’ Seasoning: Salt, Chilli Flakes & Black Pepper
π First things first, fry off your chicken and get a really good sear! I timed around 4 mins per side until the sear was darker brown. Set aside till later!
π§ Give your onions a good toss in butter, and add a sprinkle of salt. Make sure you scrape all the nice roasty chicken bits while you're at it. I took my time w this and waited till they were soft and charred, around 10 mins. Time to add your mushrooms and garlic, and fry till browned and fragrant.
π₯ Now, how I make this lighter than the average stew but still really hearty, is that I used a lightened sour cream/creme fraiche, and added lesser cooking cream. I also added chicken broth! Add this in after your ingredients are nice and toasty, making sure to mix the sour cream in really well.
π₯ Dunk the chicken back in and let it simmer till it's fully fully cooked and the sauce is thiccccc with as many C's as you want hehe
I served mine with Garlic Mash and abit of plain aglio e olio pasta, but feel free to add veg, roasted cauli or whatever floats your goats!! It's a super hearty and comforting dish to eat #WithYourBesties too, for a potluck or when you're hosting pals!
