We bought a basil plant recently and are now on a mission to make as many dishes as we can with its fresh leaves. This tomato soup is perfect for the rainy and cold season now and warms up your soul! 🍅☀️
Ingredients:
5 mid-sized tomatoes, halved
2 sprigs of thyme
8 basil leaves
5 cloves of garlic
1 medium onion, sliced thinly
4 tbsp olive oil
100g passata
250ml chicken stock
10g butter
Pepper
Salt
Recipe:
1. Place tomatoes, garlic and thyme on a baking dish. Coat with 2 tbsp of olive oil, salt and pepper.
2. In a hot pan with 2 tbsp olive oil and butter, caramelise the onions. It should brown after 20 minutes.
3. In a saucepan, heat up passata and chicken stock. Add the roasted tomatoes, garlic and carmaelised onion in, then blend with a stick blender.
4. Stir in fresh basil leaves. You can also blend again at this point.
5. Serve with a drizzle of olive oil and top with more basil leaves for garnish!
