EAT CLEAN in 5 MINUTES: Yummy toast at home! 🍄🍅🍞

I challenged myself to eat toasts for a week and as part of my challenge, I made this mushroom tomato pesto toast! This was probably one of my favourite toasts of the week! 🤤❤️ The freshness of the tomatoes with the acidity of the balsamic vinegar, to the meatiness of the garlic mushrooms and salty fragrance of the pesto just left me wanting more!

Ingredients:

10 cherry tomatoes, sliced into quarters

Drizzle of balsamic vinegar

100g shitake mushrooms, sliced

3 cloves garlic, sliced

2 tbsp pesto

Salt & pepper

1 tbsp olive oil

Recipe:

1. Saute mushrooms with garlic, seasoning with salt & pepper.

2. Slice cherry tomatoes and soak in balsamic vinegar.

3. Toast bread and assemble by spreading a layer of pesto on the bread, then piling on the tomatoes and mushrooms. Add extra dollops of pesto on the top for your eyes to feast on the toast! 👀

Definitely can rival those at cafes, for a fraction of the cost!
