@paintandpetals and @carneliancooks teamed up to make the CUTEST and TASTIEST Lemon Poppyseed Streusel Muffins! Just two local Lake Tahoe businesses coming together to have a great time, cook good food, and look good while doing it!

L E M O N . P O P P Y S E E D. S T R E U S E L . M U F F I N S 

INGREDIENTS : 

Muffin: 

2 C all purpose flour 

2 large eggs 

½ C vegetable oil 

½ C buttermilk 

2 t baking powder 

½ t baking soda 

½ t salt 

¾ C granulated sugar 

¼ C lemon juice 

2 lemons, zested 

2 T poppyseeds 

Streusel Topping: 

2 T unsalted butter, cubed and room temperature 

4 T granulated sugar 

½ C all purpose flour 

METHOD : 

Line a muffin pan with liners and set the oven to 375 degrees. 

In a large bowl add all of the streusel topping ingredients. Combine ingredients by rubbing together with fingertips until there is a dry crumbly texture. Set the bowl aside. 

In a second large bowl add the eggs, vegetable oil, lemon zest, poppyseeds, and sugar. Mix until thoroughly combined. Then add the buttermilk and lemon juice. Mix until thoroughly combined. Lastly, add the baking powder, baking soda, salt, and flour. Whisk until all ingredients are thoroughly combined. 

Add the mixture to the lined muffin baking pan, followed by the streusel mixture. Bake between 20 - 23 minutes. Then let cool in the pan for five minutes before placing each muffin on a cooling rack.
