Green Chicken Enchilada Soup

Delicious and easy crockpot soup!!

• 2 1/2 lbs Chicken breasts

• 24 oz Chicken broth

• 1/2 Cup Salsa, green

• 1 Salt and pepper to taste

1/2 Cup Cream cheese

• 1 cup Half and half or heavy cream

• 2 cup Monterey jack cheese

• 1 28oz Can green enchilada sauce

1 4oz can green chile

Place Chicken, green chiles, broth and enchilada sauce in slow cooker and cook on low for 6 hours. High for 4.

Remove Chicken and shred then add in salsa, half and half, cream cheese and regular cheese. Reduce to low until cheese melts!

I topped with parsley and green onions but of course could do extra cheese, avocado... enjoy!
