Chicken enchiladas soup

An easy crock pot idea is chicken enchilada soup!

2 lbs chicken

1 can enchilada sauce

1 can tomato paste

2 cans fire roasted tomatoes

2 bell peppers

6-8 dried chilis

1 onion

2 tbsp paprika

1 tbsp chili powder

2 tsp oregano

2 tsp parsley (or use fresh)

4 garlic cloves minced

1 bag frozen corn

4 cups water mixed

2 tbsp beef bouillon (more to taste 2 tbsp worked for me)

2 tbsp arrowroot or cornstarch

Toss in a crock pot! When it’s done, you can shred the chicken or chop it up and put in a burrito (don’t forget to add some of the soup mixture to the burrito!). The soup can be put in a blender for a smooth soup or dip for the burrito or can be eaten as is with corn chips. Delicious! And serves four people over three meals.
